Grease the pressure cooker insert with butter.
In a large bowl, whisk eggs, milk, maple syrup, cinnamon, vanilla extract, and salt until combined.
Add the brioche cubes into the egg mixture and stir to coat. Let it soak for 5 minutes.
Pour the mixture into the greased pressure cooker insert.
Close the lid and cook on high pressure for 40 minutes.
Release pressure carefully, open the lid, and serve the French toast warm with fruits or syrup as desired.
