Breakfast poutine is a great way to start the day. Homemade fries, loaded with veggies and meat, topped with an egg and hollandaise sauce, what's not to love?
Preheat your oven to 425°F. Peel and chop potatoes into thin strips. Toss with olive oil, salt, and pepper, then spread on a baking sheet for roasting.
Roast potatoes in the oven for about 30 minutes until golden and crispy. This step makes all the difference for that crunchy texture you love.
While potatoes roast, cook bacon in a skillet over medium heat until crispy. Take the bacon out and set aside for later.
In the same skillet, sauté ham, bell pepper, mushrooms, onion, and tomatoes until veggies are soft and fragrant.
Set a pot of water to boil. Gently add the eggs to poach for 4 to 5 minutes till the whites are set but yolks still tender.
Layer your roasted potatoes on a plate first. Spoon over the sautéed veggie and ham mix, then scatter cheese curds on top. Don’t forget the crispy bacon pieces!
Carefully place a poached egg over each serving. The yolk’s gonna break open and add extra goodness.
Drizzle warm homemade hollandaise sauce over everything, then sprinkle sliced green onions for a fresh pop.
