Ingredients
  

  • 1 lb bok choy
  • 4 cloves garlic, minced
  • 1 inch ginger, peeled and grated (about 1 tablespoon)
  • 2 tablespoons vegetable oil
  • 2 tablespoons soy sauce
  • 1 teaspoon sesame oil
  • 1 tablespoon sesame seeds optional
  • to taste salt

Instructions
 

  • Begin by rinsing the bok choy thoroughly under cold water to remove any grit. Slice the bok choy in half lengthwise if large, or leave whole if small. Set aside.
  • Heat the vegetable oil in a large skillet or wok over medium-high heat.
  • Add the minced garlic and grated ginger to the skillet. Stir-fry for about 30 seconds, or until fragrant. Be careful not to let them burn.
  • Add the bok choy to the skillet, stirring gently to coat the leaves in the garlic and ginger mixture.
  • Cook for about 5 minutes, stirring occasionally, until the bok choy is tender but still vibrant green.
  • Pour the soy sauce and sesame oil over the bok choy, and stir well to combine. Cook for an additional 1-2 minutes.
  • Remove from heat. If desired, sprinkle sesame seeds on top for added crunch and flavor. Season with salt and pepper to taste.
  • Serve immediately as a side dish, alongside your favorite main course.

Notes

To enhance flavor, consider adding crushed red pepper flakes if you like a bit of heat.
You can also add other vegetables such as bell peppers or snap peas to this dish for variation.
This dish pairs wonderfully with rice or noodles for a complete meal.
