- 2 cups elbow macaroni
- 6 slices bacon Cooked until crispy and chopped.
- 1 cup cherry tomatoes Halved.
- 1 cup iceberg lettuce Chopped.
- ½ cup mayonnaise
- 1 tablespoon Dijon mustard
- 1 tablespoon apple cider vinegar
- to taste salt
- to taste black pepper
Bring a large pot of salted water to a boil. Add the elbow macaroni and cook according to package instructions until al dente, about 8-10 minutes. Drain and rinse under cold water to cool.
While the macaroni is cooking, cook the bacon in a skillet over medium heat until crispy. Remove and drain on paper towels. Once cooled, chop the bacon into small pieces.
In a large mixing bowl, combine the cooled macaroni, chopped bacon, halved cherry tomatoes, and chopped iceberg lettuce.
In a small bowl, whisk together the mayonnaise, Dijon mustard, apple cider vinegar, salt, and black pepper until smooth.
Pour the dressing over the macaroni mixture and toss gently to combine, making sure everything is evenly coated.
Taste and adjust seasoning if needed. Chill the salad in the refrigerator for at least 30 minutes before serving for the flavors to meld.
