Start by cooking your bacon in a skillet over medium heat until crisp. Drain on paper towels and chop once cooled.
Pour 1 cup broth depth into your pressure cooker and add chicken pieces. Seal the lid carefully using the sealing ring to keep pressure steady.
Set the cooker to high pressure for about 10 minutes to get that tender pull chicken. The float valve will pop up when it’s pressurized exactly right.
Once done, do a quick release to let out the steam safely and open the lid. Check the chicken; it should be falling apart easy. Shred it up if you haven’t yet.
In a large mixing bowl, combine the shredded chicken, chopped bacon, sliced tomatoes, diced onion, and chives or green onion. Toss it all together.
In a small bowl, mix mayo, Greek yogurt, garlic powder, onion powder, salt, and pepper till it forms a smooth dressing.
Pour the dressing over your chicken mixture and gently toss everything so each bite is nicely coated. Eat right away or let it chill for thirty minutes for flavors to blend.

Serve with extra bacon and chives on top for added crunch and flavor. Refrigerate leftovers for up to four days.
