Blackberry Cream Cheese Puff Pastry: A Pressure Cooker Treat
A flaky, golden puff pastry filled with luscious cream cheese and tangy blackberry filling, made extra easy using your pressure cooker. Ideal for dessert or weekend breakfast!

Preheat your oven to 400°F and line a baking sheet with parchment paper.
In a small saucepan, combine blackberries, sugar, lemon juice, and water. Cook over medium heat for about 5 minutes until berries break down.
Mix cornstarch with a splash of cold water and add to the berry mixture. Stir and cook for another 1-2 minutes until thickened. Remove from heat and let cool.
In a bowl, beat cream cheese until fluffy. Add sugar, egg yolk, lemon juice, and vanilla. Mix until smooth.
Unfold puff pastry on a floured surface. Spread half the cream cheese mixture on each sheet, leaving a ½ inch border.
Spoon cooled blackberry filling evenly over the cream cheese. Fold each pastry sheet in half lengthwise and seal the edges.
Cut folded pastry into 1-inch strips. Twist and place on the lined baking sheet.
Whisk egg with water for the wash and brush each twist. Bake for 15–18 minutes or until golden.
Let pastries cool slightly on the tray or wire rack.
Mix powdered sugar, lemon juice, and vanilla to make glaze. Drizzle over cooled pastries and serve.
Notes
Best served fresh. Reheat in toaster oven at 350°F for 5–7 min. Can be frozen in foil for later enjoyment!
