- 1 lb boneless, skinless chicken breast Cut into bite-sized pieces.
- 2 tablespoons soy sauce
- 1 tablespoon cornstarch
- 2 tablespoons vegetable oil
- 1 medium onion Sliced.
- 1 bell pepper bell pepper Sliced (any color).
- 2 cloves garlic Minced.
- 1 tablespoon freshly ground black pepper
- 1 teaspoon sugar
- 1 tablespoon oyster sauce Optional.

In a bowl, combine the chicken pieces, soy sauce, and cornstarch. Mix well and allow it to marinate for about 10 minutes.
Heat the vegetable oil in a wok or large skillet over medium-high heat.
Add the marinated chicken to the wok and stir-fry for about 5-7 minutes, or until the chicken is cooked through and slightly browned.
Remove the chicken from the wok and set aside. In the same wok, add the sliced onion, bell pepper, and minced garlic. Stir-fry for 3-4 minutes until the vegetables are tender yet crisp.
Return the chicken to the wok and mix well. Add the black pepper, sugar, and oyster sauce (if using). Stir well to combine all ingredients and cook for an additional 2-3 minutes. Taste and adjust seasoning with salt if necessary.
Serve immediately over cooked rice if desired.
For extra heat, you can add chili flakes or freshly chopped chili peppers.
Feel free to incorporate other vegetables like broccoli, snap peas, or baby corn for more variety.
