Preheat the oven to 350°F (175°C). Grease and flour a 9x13-inch baking pan or line it with parchment paper for easy removal.
In a large mixing bowl, combine the flour, sugar, baking powder, baking soda, cinnamon, nutmeg, ginger, and salt. Whisk together until well blended.
In another bowl, mix together the vegetable oil, eggs, pumpkin puree, and vanilla extract until smooth.
Gradually add the wet ingredients to the dry ingredients, stirring until just combined. Be careful not to overmix.
Pour the batter into the prepared baking pan and spread it evenly. Bake in the preheated oven for 25-30 minutes, or until a toothpick inserted in the center comes out clean.
While the cake is baking, prepare the cream cheese frosting. In a mixing bowl, beat the softened cream cheese and unsalted butter together until creamy.
Gradually add the powdered sugar and vanilla extract, mixing until smooth and fluffy.
Once the cake is cooled completely in the pan on a cooling rack, spread the cream cheese frosting evenly over the top.
Cut into squares and serve. Enjoy!
