Grab a small saucepan to begin.
Combine rice vinegar, water, and cane sugar. Stir until sugar dissolves.
Add rice wine, sambal oelek or chili flakes, garlic, ginger, and tamari. Mix well.
Bring mixture to a gentle boil over medium heat, stirring occasionally.
Reduce heat to low and simmer for 5–7 minutes until slightly thickened.
Remove from heat, let cool, then store in a sealed jar in the fridge for up to two weeks.
Notes
Use pre-minced garlic and ginger to save time. Store extra sauce in the fridge or freeze in ice cubes for later use.
