Preheat your oven to 350°F (175°C). Grease the loaf pan and, if desired, line it with parchment paper for easy removal.
In a mixing bowl, whisk together the flour, baking soda, baking powder, salt, cinnamon, nutmeg, and ginger until well combined.
In another bowl, combine the granulated sugar, brown sugar, and vegetable oil. Mix well.
Add the eggs one at a time, mixing thoroughly after each addition. Then stir in the pumpkin puree and vanilla extract until smooth.
Gradually add the dry ingredients to the wet ingredients, mixing gently until just combined. Do not overmix; a few lumps are fine.
If using chopped nuts or chocolate chips, fold them into the batter at this point.
Pour the batter into the prepared loaf pan and spread it evenly.
Bake in the preheated oven for 60 minutes, or until a toothpick inserted into the center comes out clean.
Once baked, remove the bread from the oven and let it cool in the pan for about 10 minutes. Then transfer it to a wire rack to cool completely.
