Ingredients
  

  • 1.5 cups all-purpose flour
  • 1 teaspoon baking soda
  • 0.5 teaspoon baking powder
  • 0.5 teaspoon salt
  • 1 teaspoon ground cinnamon
  • 0.5 teaspoon ground nutmeg
  • 0.25 teaspoon ground ginger
  • 1 cup granulated sugar
  • 0.5 cup brown sugar, packed
  • 0.5 cup vegetable oil
  • 2 large eggs
  • 1 cup pumpkin puree canned or fresh
  • 1 teaspoon vanilla extract
  • 0.5 cup chopped nuts optional, such as walnuts or pecans
  • 0.5 cup chocolate chips optional

Instructions
 

  • Preheat your oven to 350°F (175°C). Grease the loaf pan and, if desired, line it with parchment paper for easy removal.
  • In a mixing bowl, whisk together the flour, baking soda, baking powder, salt, cinnamon, nutmeg, and ginger until well combined.
  • In another bowl, combine the granulated sugar, brown sugar, and vegetable oil. Mix well.
  • Add the eggs one at a time, mixing thoroughly after each addition. Then stir in the pumpkin puree and vanilla extract until smooth.
  • Gradually add the dry ingredients to the wet ingredients, mixing gently until just combined. Do not overmix; a few lumps are fine.
  • If using chopped nuts or chocolate chips, fold them into the batter at this point.
  • Pour the batter into the prepared loaf pan and spread it evenly.
  • Bake in the preheated oven for 60 minutes, or until a toothpick inserted into the center comes out clean.
  • Once baked, remove the bread from the oven and let it cool in the pan for about 10 minutes. Then transfer it to a wire rack to cool completely.

Notes

For added flavor, consider incorporating 1 teaspoon of pumpkin spice blend in place of individual spices.
This bread can be stored at room temperature for up to 3 days or in the refrigerator for up to a week.
Pumpkin bread also freezes well. Wrap it tightly in plastic wrap and foil to preserve its freshness for up to 3 months.
