  • 1 cup raisins
  • 1 cup candied cherries red and green, coarsely chopped
  • 1 cup candied pineapple coarsely chopped
  • 1 cup Brazil nuts coarsely chopped
  • ½ cup golden Crisco shortening
  • ¾ cup white sugar
  • 1 egg
  • 1 teaspoon vanilla extract
  • ½ teaspoon almond extract
  • 1 ¼ cups flour
  • ½ teaspoon baking soda
  • ½ teaspoon salt

Instructions

  • Preheat oven to 300°F.
  • In large bowl, cream golden Crisco shortening and white sugar until light and fluffy.
  • Add egg, vanilla, and almond extract. Beat until well mixed.
  • Gradually mix in flour until just combined. Do not overmix.
  • Stir in raisins, candied cherries, candied pineapple, and chopped Brazil nuts.
  • Drop rounded spoonfuls of dough onto parchment-lined or greased baking sheet spaced 2 inches apart.
  • Bake for 25 to 30 minutes or until edges are lightly golden.
  • Let cool 5 minutes on sheet before transferring to wire rack to cool completely.

Notes

Chill the dough to reduce spread. Cookies freeze well for up to 3 months.
