  • 2 cups Shredded chicken or turkey pre-cooked or leftovers
  • 1 tablespoon Olive oil or avocado oil
  • 1 Sweet onion diced
  • 1 Red bell pepper chopped
  • 3 cloves Garlic minced
  • 15 ounces Canned diced tomatoes
  • 2 cups Chicken or turkey broth
  • 15 oz Black beans rinsed and drained
  • 1 ½ cups Frozen sweet corn or canned, drained
  • 1 teaspoon Chili powder
  • 1 teaspoon Ground cumin
  • 1 teaspoon Dried oregano
  • ½ teaspoon Chili flakes
  • Salt and pepper to taste

  • Heat olive oil in the pressure cooker pot over medium heat until it shimmers.
  • Add diced onion and chopped red bell pepper. Sauté for 5-7 minutes until softened.
  • Stir in minced garlic and cook for 1 minute until fragrant, but not burned.
  • Add shredded chicken, diced tomatoes, broth, black beans, corn, and all spices. Stir well to combine.
  • Seal the pressure cooker lid properly and cook under pressure for 10 minutes once the valve hisses.
  • Perform a slow release of pressure. Carefully open the lid and give the chili a stir.
  • Taste and adjust salt and pepper. Serve with your favorite toppings.

Notes

Use store-bought rotisserie chicken or leftovers to save prep time. For a vegetarian version, use vegetable broth and skip the chicken. Adjust chili flakes for desired spice level.
