Instructions
Preheat your oven to 375°F (190°C).
In a skillet over medium heat, sauté onion and garlic until translucent.
Add ground beef and cook until browned; drain excess fat.
In a bowl, mix ricotta, 1 cup mozzarella, Parmesan, egg, basil, oregano, salt, and pepper together.
Fold in cooked beef and onion garlic mixture into ricotta mix.
Cook jumbo shells according to package directions and drain.
Fill each shell with the beef and cheese mixture and place in baking dish with marinara sauce.
Cover with remaining sauce and top with leftover mozzarella, cover with foil and bake 20 minutes.
Remove foil and bake 10 more minutes until bubbly and golden.
Notes
Serve with a sprinkle of fresh basil or parsley. Adjust seasonings to taste.
