BBQ Chicken Stuffed Sweet Potatoes

  • 3 Sweet potatoes goodly sized, washed and poked
  • 1 tablespoon Extra virgin olive oil for rubbing
  • ½ teaspoon Sea salt
  • 1.5 lb Chicken breast
  • 12 oz BBQ sauce smoky tang
  • cup Chicken broth to keep moist
  • 1 teaspoon Garlic powder
  • ½ teaspoon Smoked paprika
  • ½ teaspoon Onion powder
  • 1 teaspoon Sea salt additional
  • ½ teaspoon Black pepper
  • 2 cups Slaw mix
  • 1 cup Shredded carrot
  • 3 tablespoon Mayo
  • 2 teaspoon Apple cider vinegar
  • 1 teaspoon Mustard
  • 1 teaspoon Honey
  • 1 teaspoon Lemon juice
  • ¼ teaspoon Salt
  • 2 tablespoon Green onion chopped

Instructions

  • Preheat oven to 400 degrees Fahrenheit (or 200 Celsius).
  • Wash sweet potatoes and prick all over with a fork.
  • Rub sweet potatoes with olive oil and sprinkle with sea salt.
  • Place sweet potatoes on a baking sheet and bake for 45-60 minutes until soft.
  • While baking, cook chicken breasts in a skillet over medium heat for 10-15 minutes.
  • Shred the chicken and mix with BBQ sauce and chicken broth in skillet.
  • Stir in garlic powder, smoked paprika, onion powder, and sea salt. Simmer for 5 minutes.
  • Slice baked sweet potatoes lengthwise and stuff with BBQ chicken mixture.
  • Top sweet potatoes with slaw and serve warm.

Notes

Shredded BBQ Crockpot Chicken will be enough for more than 3 sweet potatoes.
