Instructions
Preheat oven to 400 degrees Fahrenheit (or 200 Celsius).
Wash sweet potatoes and prick all over with a fork.
Rub sweet potatoes with olive oil and sprinkle with sea salt.
Place sweet potatoes on a baking sheet and bake for 45-60 minutes until soft.
While baking, cook chicken breasts in a skillet over medium heat for 10-15 minutes.
Shred the chicken and mix with BBQ sauce and chicken broth in skillet.
Stir in garlic powder, smoked paprika, onion powder, and sea salt. Simmer for 5 minutes.
Slice baked sweet potatoes lengthwise and stuff with BBQ chicken mixture.
Top sweet potatoes with slaw and serve warm.
Notes
Shredded BBQ Crockpot Chicken will be enough for more than 3 sweet potatoes.
