- 2 cups cooked chicken, shredded You can use store-bought rotisserie chicken to save time.
- ½ cup BBQ sauce
- 1 cup shredded cheddar cheese or Mexican blend
- 4 large flour tortillas
- 2 tablespoons olive oil
- ½ cup diced red onion Optional.
- ½ teaspoon garlic powder Optional.
- to taste sour cream For serving, optional.
- to taste fresh cilantro For garnish, optional.
In a mixing bowl, combine the shredded chicken and BBQ sauce. Mix well until the chicken is fully coated.
Heat 1 tablespoon of olive oil in a large skillet over medium heat.
Place one tortilla in the skillet. Spread ¼ of the BBQ chicken mixture over half of the tortilla. Top with ¼ cup of shredded cheese and, if using, some diced red onion.
Fold the tortilla in half over the filling.
Cook for about 3-4 minutes, until the bottom is golden brown and the cheese starts melting.
Carefully flip the quesadilla using tongs and add the remaining olive oil to the skillet if necessary. Cook for an additional 3-4 minutes until the second side is golden and crispy.
Remove from the skillet and let cool for a minute before slicing into wedges.
Repeat steps 3-7 for the remaining tortillas.
Serve warm with sour cream and garnish with fresh cilantro, if desired.
Feel free to customize the quesadillas with additional ingredients such as jalapeños or bell peppers for added flavor.
You can use store-bought rotisserie chicken to save time.
Leftover quesadillas can be stored in the refrigerator for up to 3 days and reheated in a skillet or microwave.
