Ingredients
  

  • 2 cups cooked chicken, shredded
  • ½ cup BBQ sauce
  • 1 ½ cups shredded cheese (cheddar or mozzarella)
  • 1 cup bell peppers, sliced Any color
  • ½ cup red onion, thinly sliced
  • 4 large flour tortillas
  • 2 tablespoons olive oil
  • Salt and pepper To taste
  • fresh cilantro For garnish (optional)

Instructions
 

  • In a mixing bowl, combine the shredded chicken and BBQ sauce. Stir until the chicken is evenly coated.
  • Heat 1 tablespoon of olive oil in a large skillet over medium heat. Add the sliced bell peppers and red onion. Sauté for about 3-4 minutes until they are tender but still crisp. Season with salt and pepper to taste. Remove from the skillet and set aside.
  • In the same skillet, add another tablespoon of olive oil and place one tortilla in the pan. Evenly spread a quarter of the BBQ chicken mixture over half of the tortilla, then sprinkle with a quarter of the shredded cheese and top with some sautéed vegetables.
  • Fold the tortilla in half and cook for about 3-4 minutes, or until the bottom is golden brown. Carefully flip it using a spatula and cook for another 2-3 minutes until the other side is also golden brown and the cheese has melted.
  • Repeat steps 3-4 with the remaining tortillas and ingredients.
  • Once all quesadillas are cooked, slice them into wedges and serve warm. Garnish with fresh cilantro if desired.

Notes

For extra flavor, consider adding jalapeños or spices to the chicken mixture.
Serve with sour cream, guacamole, or extra BBQ sauce for dipping.
You can substitute the chicken with other proteins, like pulled pork or beef, if desired.
