store-bought or homemade

shredded mozzarella

Instructions
Place the chicken in a bowl and add olive oil, sweet paprika, smoked paprika, garlic powder, onion powder, salt, and pepper. Toss until evenly coated.
Heat a frying pan over medium-high heat. Cook the chicken for 6 minutes or until browned. Set aside.
Preheat the oven to 200°C (400°F). Line a baking tray with parchment paper and place the flatbreads on it.
Spread a thin layer of BBQ sauce over each flatbread.
Sprinkle shredded mozzarella over the flatbreads and top with cooked chicken, red onion slices, and capsicum slices.
Bake the flatbreads for 8–10 minutes or until the cheese is melted and bubbly.
Sprinkle with coriander before serving.

Notes
Serve hot. Store leftovers in an airtight container in the fridge for up to 4 days. Reheat in the oven or skillet to keep flatbreads crispy.
