  • 1 boneless skinless chicken breast cut into bite-sized pieces
  • 1 tablespoon olive oil to keep that chicken juicy while cooking
  • 1 teaspoon sweet paprika
  • ½ teaspoon smoked paprika
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • ½ teaspoon sea salt flakes
  • ½ teaspoon freshly cracked black pepper
  • 4 flatbreads
  • ¼ cup BBQ sauce store-bought or homemade
  • 1 cup shredded mozzarella
  • 1 small red onion finely sliced
  • 1 small capsicum finely sliced
  • 1 tablespoon freshly chopped coriander optional

  • Place the chicken in a bowl and add olive oil, sweet paprika, smoked paprika, garlic powder, onion powder, salt, and pepper. Toss until evenly coated.
  • Heat a frying pan over medium-high heat. Cook the chicken for 6 minutes or until browned. Set aside.
  • Preheat the oven to 200°C (400°F). Line a baking tray with parchment paper and place the flatbreads on it.
  • Spread a thin layer of BBQ sauce over each flatbread.
  • Sprinkle shredded mozzarella over the flatbreads and top with cooked chicken, red onion slices, and capsicum slices.
  • Bake the flatbreads for 8–10 minutes or until the cheese is melted and bubbly.
  • Sprinkle with coriander before serving.

Serve hot. Store leftovers in an airtight container in the fridge for up to 4 days. Reheat in the oven or skillet to keep flatbreads crispy.
