Cut the boneless, skinless chicken breasts into bite-sized pieces and place them into a mixing bowl.
In a separate small bowl, combine the soy sauce, honey, sesame oil, minced garlic, ground ginger, red pepper flakes, salt, and pepper. Whisk until well blended.
Pour the marinade over the chicken and mix until all pieces are coated. Cover with plastic wrap and let marinate for at least 10 minutes (or up to 2 hours in the refrigerator for stronger flavor).
Prepare the Bang Bang sauce by combining the mayonnaise, sweet chili sauce, sriracha, and lime juice in a saucepan. Whisk together until smooth and set aside.
Preheat grill or grill pan over medium-high heat. If using wooden skewers, soak them in water for about 20 minutes to prevent burning.
Thread the marinated chicken pieces onto the skewers. Brush the grill with vegetable oil to prevent sticking.
Place the skewers on the grill and cook for about 4-5 minutes on each side, or until fully cooked and nicely marked.
Remove the skewers from the grill and let them rest for a minute.
Serve the Bang Bang Chicken Skewers on a platter with the Bang Bang sauce on the side for dipping.
