  • 3 extremely ripe bananas mashed
  • 6 tablespoons butter melted
  • 2 eggs at room temperature
  • ¾ cup nonfat Greek yogurt
  • 2 teaspoons vanilla extract
  • 2 cups all-purpose flour can swap half for whole wheat
  • 1 teaspoon baking soda
  • ¾ cup sugar
  • 1 teaspoon salt
  • cup Nutella gently folded in

  • Start off by prepping your muffin cups. Line them with paper liners.
  • Mix your mashed bananas and melted butter in a big bowl.
  • Beat in the eggs, Greek yogurt, and vanilla extract.
  • In another bowl, whisk together flour, baking soda, sugar, and salt.
  • Slowly add those dry ingredients to your wet mix, stirring just till combined.
  • Now fold in your Nutella gently, swirling it through the batter.
  • Spoon the batter into each muffin cup about two thirds full.
  • Set your pressure cooker to baking mode at 350°F.
  • Cook for about 25 minutes, let a natural release for 10 minutes, then quick release.

Notes

Store any leftover muffins in an airtight container. For longer storage, freeze and thaw when needed.
