Ingredients
  

  • 1 ½ cups ripe bananas, mashed About 3 ripe bananas.
  • cup melted coconut oil Or unsalted butter.
  • ½ cup brown sugar
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1 teaspoon baking soda
  • ½ teaspoon salt
  • 1 teaspoon ground cinnamon
  • 1 ½ cups all-purpose flour
  • ½ cup chopped walnuts Optional.
  • ½ cup chocolate chips Optional.

Instructions
 

  • Preheat your oven to 350°F (175°C). If using muffin liners, place them in a muffin tin or lightly grease the tin.
  • In a large mixing bowl, mash the ripe bananas with a fork or potato masher until smooth.
  • Stir in the melted coconut oil (or butter) until well combined.
  • Add the brown sugar, egg, and vanilla extract to the banana mixture, whisking until smooth and evenly mixed.
  • In another bowl, combine the baking soda, salt, ground cinnamon, and all-purpose flour. Mix well.
  • Gradually fold the dry ingredients into the wet mixture using a rubber spatula. Be careful not to overmix; it's okay if there are a few lumps.
  • If desired, gently fold in the chopped walnuts and chocolate chips.
  • Divide the batter evenly among the muffin cups, filling each about ¾ full.
  • Bake in the preheated oven for 18-20 minutes, or until a toothpick inserted into the center of a muffin comes out clean.
  • Remove from the oven and allow the muffins to cool in the tin for about 5 minutes before transferring them to a wire rack to cool completely.

Notes

For extra flavor, consider adding a sprinkle of cinnamon sugar on top of the muffins before baking.
These muffins can be stored in an airtight container at room temperature for up to 3 days or frozen for longer storage. Reheat in the microwave or toaster oven for a warm treat.
