Ingredients
  

  • 2 cups cottage cheese 16 oz
  • 8 large eggs
  • 1 cup shredded cheese cheddar or your choice
  • ¼ cup chopped fresh parsley or other herbs
  • ¼ teaspoon salt
  • ¼ teaspoon black pepper
  • ½ cup diced vegetables optional (spinach, bell peppers, or tomatoes)

Instructions
 

  • Preheat your oven to 350°F (175°C).
  • In a large mixing bowl, whisk together the cottage cheese and eggs until well combined.
  • Add in the shredded cheese, chopped parsley, salt, and black pepper. If using, fold in the diced vegetables at this stage.
  • Grease the baking dish lightly with cooking spray or butter to prevent sticking.
  • Pour the mixture evenly into the prepared baking dish, spreading it out gently with a spatula.
  • Place the baking dish in the preheated oven and bake for about 25 minutes, or until the edges are lightly golden and the eggs are set in the center.
  • Remove from the oven and let it cool for a few minutes before slicing into squares.
  • Serve warm, garnished with additional herbs if desired.
