In a big bowl, combine Greek yogurt, garlic powder, paprika, Italian seasoning, salt, black pepper, and lemon juice. Stir well.
Add chicken tenders to the marinade, ensuring each is well-coated. Refrigerate for at least 30 minutes or up to 2 hours.
Preheat oven to 400°F (200°C) and line a baking sheet with parchment paper.
Dredge marinated chicken in panko mix till evenly coated.
Place tenders on baking sheet, spray with olive oil, and bake for 20-25 minutes until golden and cooked through.
Let cool slightly and serve with dipping sauce.
