Ingredients
  

  • 1 cup all-purpose flour
  • ½ cup granulated sugar
  • 1 teaspoon baking powder
  • ½ teaspoon baking soda
  • ½ teaspoon salt
  • ½ teaspoon ground cinnamon
  • ½ cup buttermilk (or milk with ½ tablespoon of vinegar)
  • 1 large egg
  • 2 tablespoons unsalted butter Melted
  • 1 teaspoon vanilla extract
  • 1 cup fresh blueberries (or frozen, thawed)

Instructions
 

  • Preheat your oven to 375°F (190°C) and line a baking sheet with parchment paper to prevent sticking.
  • In a mixing bowl, combine the flour, sugar, baking powder, baking soda, salt, and ground cinnamon. Stir well to combine.
  • In another bowl, whisk together the buttermilk, egg, melted butter, and vanilla extract until well combined.
  • Pour the wet ingredients into the dry ingredients and mix gently until just combined. Be careful not to overmix; some lumps are okay.
  • Fold in the blueberries with a rubber spatula, ensuring they are evenly distributed throughout the batter.
  • Using a tablespoon or small cookie scoop, drop the batter onto the prepared baking sheet, leaving space between each fritter bite.
  • Bake for 12-15 minutes or until the tops are lightly golden and a toothpick inserted into the center comes out clean.
  • Remove from the oven and let cool on the baking sheet for about 5 minutes before transferring them to a wire rack to cool completely.

Notes

You can decorate the Bites with a light dusting of powdered sugar or a simple glaze made from powdered sugar and water if desired.
Feel free to replace blueberries with other berries such as raspberries or chopped strawberries.
Store any leftovers in an airtight container at room temperature for up to 2 days or in the refrigerator for up to a week.
