Equipment

  • 1 tongs
  • 1 plate for resting the pork chops
  • 1 cutting board
  • 1 chef's knife

Ingredients
  

  • 4 pieces bone-in pork chops about 1 inch thick.
  • 4 strips bacon
  • 1 cup mushrooms, sliced such as cremini or button.
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • ½ teaspoon paprika
  • 2 tablespoons olive oil
  • ½ cup chicken broth can substitute with vegetable broth for a lighter option.
  • to taste fresh parsley, chopped for garnish.

Instructions
 

  • Season the pork chops with salt, black pepper, and paprika on both sides.
  • In a large skillet, cook the bacon over medium heat until it is crispy. Remove the bacon and set it aside on a paper towel-lined plate to drain.
  • In the same skillet, leaving the bacon fat in, add the pork chops and sear them for 4-5 minutes on each side until browned and cooked through. The internal temperature should reach 145°F (63°C). Remove the pork chops from the skillet and let them rest.
  • In the same skillet, add olive oil if needed, and then add the onions. Sauté for about 2-3 minutes until translucent.
  • Add the sliced mushrooms and garlic to the skillet. Cook for another 4-5 minutes until the mushrooms are soft.
  • Pour in the chicken broth, scraping up browned bits from the bottom of the skillet. Let it simmer for about 2 minutes.
  • Return the pork chops to the skillet, sprinkle the crumbled bacon on top, and spoon some of the mushroom mixture over them. Cook for an additional 2 minutes to heat everything through.
  • Serve the pork chops garnished with fresh parsley and enjoy your meal!

Notes

Feel free to use different types of mushrooms for a varied flavor.
You can substitute chicken broth with vegetable broth for a lighter option.
Serve with mashed potatoes or steamed vegetables for a complete meal.
