  • 3 hard boiled eggs halved
  • 1 large avocado ripe
  • 2 teaspoons fresh lime juice packs a zesty punch
  • 1 teaspoon chopped fresh cilantro gives a herb freshness
  • Pinch garlic powder to keep it subtle
  • Salt to taste for balancing all flavors
  • Black pepper freshly cracked for a bit of bite
  • Paprika for sprinkling, optional

Instructions

  • Put your eggs inside the pressure cooker with a cup of water.
  • Cook the eggs for about 5 mins under high pressure. Use natural release.
  • Peel your eggs and cut them in half lengthwise. Scoop out the yolks.
  • Mash the avocado with the yolks until smooth, adding lime juice, cilantro, garlic powder, salt, and pepper.
  • Spoon the mixture back into the egg halves. Sprinkle with paprika if desired.

Notes

Store them in an airtight container in the refrigerator for up to 3 days. Avoid freezing.
