  • 1 Baking sheet for roasting potatoes

Ingredients

Main ingredients

  • 2 pounds potatoes cut into small wedges, if long, cut wedges in half so they cook evenly
  • ½ cup olive oil rich for that smooth Greek flavor
  • 2-3 teaspoons oregano dry, kind that makes everything taste authentically Greek
  • 1-2 tablespoons lemon juice fresh to give that bright zing
  • 3 cloves allspice optional but add a cozy, warm note if you’re feelin’ adventurous
  • 2 cloves garlic quartered, gotta have garlic for that punch
  • ½ teaspoon salt just to bring all those flavors together
  • pepper freshly ground for the perfect finishing touch

Instructions

Instructions

  • Toss potato wedges with olive oil, oregano, lemon juice, garlic, salt, and pepper in a big bowl, ensuring each wedge is well coated.
  • Transfer coated potatoes into the pressure cooker, spread them out evenly and lock the lid.
  • Bring up to pressure, slow release for about 8 minutes.
  • Once naturally released, open lid, spread potatoes on a baking sheet, roast at 400°F for 30 minutes, turning halfway.
  • Serve with a drizzle of lemon juice if desired.

Notes

Serve the potatoes with a drizzle of fresh lemon juice for extra zing.
