Toss potato wedges with olive oil, oregano, lemon juice, garlic, salt, and pepper in a big bowl, ensuring each wedge is well coated.
Transfer coated potatoes into the pressure cooker, spread them out evenly and lock the lid.
Bring up to pressure, slow release for about 8 minutes.
Once naturally released, open lid, spread potatoes on a baking sheet, roast at 400°F for 30 minutes, turning halfway.
Serve with a drizzle of lemon juice if desired.
