  • 1 tablespoon Sesame oil
  • 1 lb Ground turkey
  • 0.25 cup Shredded carrots
  • 6 oz Mushrooms coarsely chopped
  • 8 oz Sliced water chestnuts drained and coarsely chopped
  • 2 Green onions chopped
  • 1 clove Garlic minced
  • 0.25 cup Hoisin sauce
  • 2 tablespoon Low sodium soy sauce
  • 1 tablespoon Rice wine vinegar
  • 2 teaspoon Red chili paste
  • 12 Butter lettuce leaves Boston or iceberg lettuce will also work

Instructions

  • Heat sesame oil in a large skillet over medium-high heat until shimmering.
  • Add ground turkey and cook, breaking it up with a spoon, for 5 to 7 minutes until browned.
  • Add garlic; cook for 1 minute until fragrant.
  • Stir in carrots, mushrooms, water chestnuts, and green onions. Cook 4 to 5 minutes until veggies are softened.
  • Add hoisin sauce, soy sauce, and rice wine vinegar. Stir and cook 2 to 3 minutes until heated through.
  • Spoon mixture into lettuce leaves and serve warm.

Notes

Store leftovers in the fridge for up to 4 days. You can freeze the filling, then thaw and reheat for quick meals.
