Whisk together flour, baking powder, salt, and cinnamon.
Melt butter, stir in sugar, then whisk in egg and vanilla.
Mix in applesauce and blend well.
Gently combine dry and wet ingredients, fold in apples.
Spoon batter onto baking sheet, give space to puff up.
Bake for 15-20 minutes, flip halfway for even color.
Let cool briefly before serving.
Optional: Glaze with apple cider and powdered sugar.
