Ingredients
  

  • 8 pieces egg roll wrappers
  • 2 cups finely shredded cabbage About 200g.
  • 1 cup shredded carrots About 100g.
  • 1 cup cooked, shredded chicken or tofu About 140g.
  • 2 cloves garlic, minced
  • 1 tablespoon soy sauce
  • 1 teaspoon sesame oil
  • ½ teaspoon ground black pepper
  • 1 tablespoon green onions, chopped Optional.
  • 1 can cooking spray

Instructions
 

  • In a mixing bowl, combine the shredded cabbage, carrots, cooked chicken or tofu, minced garlic, soy sauce, sesame oil, ground black pepper, and green onions if using. Mix well to combine.
  • Lay one egg roll wrapper on a flat surface, with one corner facing you. Place about 2 tablespoons of the filling mixture in the center of the wrapper.
  • Fold the bottom corner of the wrapper up over the filling, then fold the sides in, and roll tightly until you reach the top corner. Use a little water to seal the edge. Repeat with remaining wrappers.
  • Preheat the air fryer to 375°F (190°C) for about 5 minutes.
  • Lightly spray the air fryer basket with cooking spray. Place the egg rolls in a single layer in the basket, making sure they are not overcrowded.
  • Spray the tops of the egg rolls lightly with cooking spray for extra crispiness.
  • Cook in the air fryer for about 10-12 minutes, flipping halfway through, or until they are golden brown and crispy.
  • Remove the egg rolls from the air fryer and let them cool slightly before serving.

Notes

Serve with soy sauce, sweet and sour sauce, or your favorite dipping sauce.
You can customize the filling by adding other vegetables like bell peppers or mushrooms.
For vegetarian or vegan options, ensure to use tofu and omit any animal products.
