In a mixing bowl, whisk the eggs thoroughly until well combined.
Stir in the shredded cheese, diced bell peppers, and any optional ingredients such as cooked bacon or sausage, chopped spinach, salt, and pepper. Mix until all ingredients are evenly distributed.
Lightly grease the silicone egg bite molds or muffin cups with cooking spray or oil.
Pour the egg mixture into each mold, filling them to about ¾ full to allow for expansion during cooking.
Carefully place the molds in the air fryer basket and cook at 270°F (130°C) for about 15 minutes, or until the egg bites are set and slightly puffed.
Once cooked, remove the molds from the air fryer and let them cool for a few minutes before gently removing the egg bites.
