  • 1 silicone egg bite molds or muffin cups

Ingredients
  

  • 8 large eggs
  • ½ cup shredded cheese cheddar, mozzarella, or your choice
  • ¼ cup diced bell peppers
  • ¼ cup diced cooked bacon or sausage optional
  • 2 tablespoons chopped fresh spinach optional
  • ¼ teaspoon salt
  • ¼ teaspoon black pepper
  • as needed cooking spray or oil for greasing

Instructions
 

  • Preheat the air fryer to 270°F (130°C) for about 5 minutes.
  • In a mixing bowl, whisk the eggs thoroughly until well combined.
  • Stir in the shredded cheese, diced bell peppers, and any optional ingredients such as cooked bacon or sausage, chopped spinach, salt, and pepper. Mix until all ingredients are evenly distributed.
  • Lightly grease the silicone egg bite molds or muffin cups with cooking spray or oil.
  • Pour the egg mixture into each mold, filling them to about ¾ full to allow for expansion during cooking.
  • Carefully place the molds in the air fryer basket and cook at 270°F (130°C) for about 15 minutes, or until the egg bites are set and slightly puffed.
  • Once cooked, remove the molds from the air fryer and let them cool for a few minutes before gently removing the egg bites.
  • Enjoy your air fryer egg bites warm or store them in an airtight container in the refrigerator for up to 5 days.

Notes

Feel free to customize the egg bites with different vegetables, cheeses, or proteins to suit your taste.
These egg bites can be reheated in the air fryer or microwave for a quick breakfast option during the week.
If you like a creamier texture, you can add 1-2 tablespoons of cream cheese to the egg mixture.
