Start by preheating your air fryer to 400°F (200°C).
Cut the cauliflower into bite-sized florets.
In a mixing bowl, combine the flour, water, garlic powder, onion powder, smoked paprika, salt, and black pepper. Whisk until smooth. The batter should have a thick consistency.
Dip each cauliflower floret into the batter, ensuring they are fully coated.
Lightly spray the air fryer basket with cooking spray to prevent sticking. Place the battered cauliflower florets in the basket in a single layer. You may need to cook them in batches.
Air fry the cauliflower for 12 minutes, shaking the basket halfway through for even cooking.
After 12 minutes, remove the cauliflower and toss them in the buffalo sauce until well coated.
Return the coated cauliflower to the air fryer and cook for an additional 8-10 minutes until crispy.
Once done, remove from the air fryer and serve immediately with your choice of dipping sauce, such as ranch or blue cheese.
