Add the diced onion to the skillet and cook for 2-3 minutes, stirring occasionally, until the onion becomes translucent.
Next, add the Italian sausage to the skillet. Break it up with the spatula and cook until browned, about 5-7 minutes.
Stir in the minced garlic and paprika, cooking for another minute until fragrant.
Add the diced potatoes to the skillet, stirring to combine with the sausage and onion mixture. Season with salt and pepper to taste.
Pour in the chicken broth, bringing the mixture to a gentle boil. Cover the skillet with a lid and reduce the heat to low. Let it simmer for about 15 minutes, or until the potatoes are tender.
After 15 minutes, add the broccoli florets to the skillet. Stir gently to incorporate, and cover again. Cook for an additional 5-7 minutes until the broccoli is bright green and tender.
Once everything is cooked through, remove the skillet from the heat. Taste and adjust the seasoning with more salt or pepper if needed.
