Ingredients
  

  • 1 lb ground beef You can substitute ground beef for ground turkey or chicken for a leaner option.
  • 2 cups frozen diced potatoes
  • 1 can (10.5 oz) condensed cream of mushroom soup
  • 1 cup shredded cheddar cheese
  • ½ cup diced onion

Instructions
 

  • Preheat your oven to 350°F (175°C).
  • In a large skillet over medium heat, brown the ground beef along with the diced onion. Cook until the beef is fully browned and the onion is translucent, about 5-7 minutes. Drain any excess fat.
  • In a large mixing bowl, combine the cooked ground beef and onion mixture with the frozen diced potatoes and cream of mushroom soup. Mix until fully incorporated.
  • Pour the mixture into a greased casserole dish, spreading it evenly.
  • Top the mixture with shredded cheddar cheese.
  • Cover the casserole dish with aluminum foil (make sure the foil doesn't touch the cheese) and bake in the preheated oven for 30 minutes.
  • After 30 minutes, remove the foil and bake for an additional 15 minutes or until the cheese is bubbly and golden.
  • Remove from the oven and let it cool for a few minutes before serving.

Notes

You can substitute ground beef for ground turkey or chicken for a leaner option.
Feel free to add other seasonings or vegetables, such as bell peppers or garlic, to enhance the flavor.
This casserole can be stored in the refrigerator for up to 3 days, making it great for leftovers!
