  • Preheat your oven to 375 degrees F. Line a jelly roll pan with parchment paper and grease it lightly so cake won’t stick.
  • In a large bowl, beat your eggs with granulated sugar until the mix is thick and pale, about 5 minutes using a mixer.

  • Sift together the flour, baking powder, and salt. Gently fold this dry mixture into the egg mixture without overmixing.

  • Pour the batter evenly into the prepared pan, spreading to the edges but keep it light without pressing hard.
  • Bake for 12 to 15 minutes until cake springs back lightly to touch.
