30-Minute One Pot Cheesy Sausage Pasta

  • 1 tablespoon Olive oil
  • 12-14 oz Cooked sausage sliced into discs
  • 0.5 cup Diced onion yellow or white
  • 2-3 cloves Garlic minced
  • 0.5 teaspoon Salt or to taste
  • 0.5 teaspoon Black pepper freshly ground
  • 0.25 teaspoon Red pepper flakes optional for heat
  • 2 cups Chicken broth reduced sodium
  • 0.5 cup Milk 2% or whole
  • 10 oz Rotel undrained
  • 6 oz Dry egg noodles or rotini, ziti, penne
  • 1 tablespoon Cornstarch optional for thickening
  • 2 cups Shredded cheddar cheese sharp or extra sharp
  • Green onions optional garnish

Instructions

  • Heat olive oil in a pressure cooker pot over medium-high heat.
  • Add sliced sausage and cook 4-5 minutes until lightly browned.
  • Add diced onion and sauté 2-3 minutes until softened.
  • Stir in garlic, salt, pepper, and red pepper flakes. Cook for 1 minute.
  • Pour in chicken broth, milk, and undrained Rotel. Stir well to combine.
  • Add dry pasta, making sure it's submerged. Lock lid and cook under high pressure 6 minutes.
  • Quick release pressure, unlock lid, and stir in shredded cheddar until melted.
  • If sauce is thin, dissolve cornstarch in small amount of warm liquid from pot and stir in. Let sit to thicken.

Notes

Garnish with green onions or herbs. For a milder version, omit red pepper flakes and use diced tomatoes instead of Rotel.
