Instructions
Heat olive oil in a pressure cooker pot over medium-high heat.
Add sliced sausage and cook 4-5 minutes until lightly browned.
Add diced onion and sauté 2-3 minutes until softened.
Stir in garlic, salt, pepper, and red pepper flakes. Cook for 1 minute.
Pour in chicken broth, milk, and undrained Rotel. Stir well to combine.
Add dry pasta, making sure it's submerged. Lock lid and cook under high pressure 6 minutes.
Quick release pressure, unlock lid, and stir in shredded cheddar until melted.
If sauce is thin, dissolve cornstarch in small amount of warm liquid from pot and stir in. Let sit to thicken.
Notes
Garnish with green onions or herbs. For a milder version, omit red pepper flakes and use diced tomatoes instead of Rotel.
