  • ½ cup natural peanut butter
  • 1 ½ cups pitted dates

  • Blend the pitted dates in a food processor until they form a thick paste.
  • Add peanut butter and oats to the processor and blend until well combined.
  • Scoop tablespoon-sized amounts and roll into balls. Flatten slightly on baking sheet.
  • Bake for 10-12 minutes, until edges are golden.
  • Let cookies cool on the sheet for 5 minutes, then transfer to a wire rack.
