Preheat the oven to 350°F (175°C) and line a baking sheet with parchment paper.
Blend the pitted dates in a food processor until they form a thick paste.
Add peanut butter and oats to the processor and blend until well combined.
Scoop tablespoon-sized amounts and roll into balls. Flatten slightly on baking sheet.
Bake for 10-12 minutes, until edges are golden.
Let cookies cool on the sheet for 5 minutes, then transfer to a wire rack.
