  • 2 small mangoes cut into thick, large strips
  • 1 green pepper sliced thin

  • 4 tablespoon Thai sweet chili sauce
  • 1 tablespoon fish sauce
  • 1 tablespoon fresh lime juice

  • Mix Thai sweet chili sauce, fish sauce, and lime juice in a small bowl. Make sure to mix well and set aside for later use.
  • Heat oil in a skillet over medium-high heat. Start by stir-frying the chicken first until cooked and lightly browned (about 5-7 minutes).
  • Toss in the green pepper slices and cook for another 2-3 minutes till they get just a little tender but still crisp.
  • Stir in the Thai sweet chili sauce, fish sauce, and lime juice. Mix it all well so everything’s coated in that sweet-spicy-limey goodness.
  • Carefully add the mango slices and green onions. Gently stir to combine without breaking up the mango. Let it cook an extra 1-2 minutes so the mango warms through but stays firm.
  • Remove from heat and serve immediately with steamed rice or noodles.

Notes

Use pre-sliced chicken strips to save time. Swap fresh mango for frozen if needed. Store leftovers in an airtight container for 3-4 days in the fridge or up to 2 months in the freezer. Reheat gently with a splash of water or broth to keep chicken juicy.
