Cook the rotini pasta according to the package instructions until al dente. Drain well and set aside.
In a large bowl, combine the sweet corn, crumbled Cotija or queso fresco cheese, and chopped cilantro.
Add the sour cream, mayonnaise, chili powder, garlic powder, and olive oil to the corn mixture.
Mix until well combined. Toss in the cooked rotini pasta and fold until everything is coated.
Season with kosher salt and fresh cracked pepper to taste. Adjust lime juice and cayenne if needed.
Notes
Best served cool or at room temperature after allowing flavors to meld.
