  • 2 tablespoons olive oil or butter if you want it richer
  • 4 cloves garlic minced, roasted if you got the time, but not a must
  • ¼ teaspoon dried oregano
  • ¼ teaspoon ground black pepper
  • ¼ teaspoon salt
  • 2-3 tablespoons flour all purpose or gluten-free is cool
  • 1 ½ cups half & half, heavy cream, or milk cashew milk works too!
  • Optional fresh or dried herbs like basil and oregano for extra zing
  • Optional add-ins like Parmesan cheese, red pepper flakes, or sautéed mushrooms if you're feelin' fancy

  • Put your pressure cooker on medium-high heat. Add the olive oil or butter so it gets nice and hot.
  • Toss in the minced garlic and stir for about 3 minutes until it smells seriously fragrant and tasty. You gotta catch that aroma rising before moving on.
  • Sprinkle in the flour along with oregano, salt, and pepper. Whisk it all like crazy so no lumps form and it turns into a smooth roux.
  • Pour in your half & half (or cream, or milk) all at once. Keep whisking nonstop to combine and avoid clumps.
  • Seal the lid and watch for the float valve to pop up - that's your sign that pressure is building inside the cooker.
  • Once pressure builds, use the quick release method right away so the sauce stops cooking at the perfect moment and keeps that fresh garlic punch.
  • Open the lid carefully, watching that steam hiss out. Stir the sauce to check consistency - it should be thick and creamy, ready for your pizza base.
  • If you want to get sassy, mix in grated Parmesan or some red pepper flakes. Serve immediately or save for later.

Notes

If you want the sauce a bit thicker, mix your remaining 1 tablespoon of flour with a bit of milk until you have a mashed potato consistency. Pour that mixture into the bubbling sauce and whisk constantly. Cook about 1 minute more. It should thicken the sauce. Repeat until you have it the thickness you want.
